confessions of a husky boy: japanese curry


Curry [カレー] is a staple in Japanese cuisine.

Introduced by the British then popularized by the Japanese military the curry scented gravy poured over rice is a mere caricature of the authentic dishes of India… but that’s what I love about it. There’s no pretense, no complexity, and definitely no reverence. The Japanese have taken the western concept of Indian curry and transformed it with gusto, using various toppings or wild ingredients stirred into the gravy.

Pictured here is a fried salmon burger/croquette on top of black beans and rice, smothered in Japanese beef curry, garnished with grated daikon. No instant curry packets here but I did use curry powder, which is the only time I use curry powder.
